With native Hong Kong chefs, Black Society delivers gold standard classic flavours using tried-and-true Cantonese cooking techniques.  Shark Cartilage and Fish Maw Soup $18 The soup was sooooo good.  It’s not a clever new dish, just classic Chinese soup done REALLY well.  The soup is so rich it is almost a milk.  It is Chinese comfort food at its best.  The best part of all, you can really taste the intense umami of the dried scallops. I have never had that intense umami flavour of dried scallops before, especially since the dried scallop is not that big.  I believe it has to do with the quality of the ingredients used. Claypot Abalone Chicken with Yunnam Ham $48 You can taste the ginger, the rice wine, the savoury, the umami, the sweet. The chicken is plump and juicy (how did they do it?) and so is the mushroom.  Braised Broccoli with Dried Scallop and Mushroom $20 You can taste the sweet, the savoury, the umami of the sauce.  The broccoli is green and firm and crunchy.  It has a lovely green colour.   You can taste the conpoy.  Braised lobster Ee-fu Noodles Seasonal Price The lobster was firm and fresh.  It was a pleasure to bite into the white meat. I thought the noodles would come drenched in a sticky, gooey, coma-inducing slurry.  Thankfully, they didn’t.  The noodles are lighter this way.  Double Boiled Bird Nest with Rock Sugar $38 Classic Cantonese double boiling — familiar and comforting.  None of the dishes are very oily.  Black Society does not rely on gimmicky new “fusion” dishes or ingredients such as foie gras, caviar or truffle oil to make it more fashionable.  Black Society delivers classic familiar flavours done really, really well.  Each dish I tried was excellent and more importantly, memorable.
