The 2021 Ombre Pinot Grigio from Veneto is an exceptional choice. Its crisp, clean profile and bright acidity are perfect for cutting through the richness of the parmesan and balancing the tanginess of the balsamic dressing. The wine’s refreshing notes of green apple and pear harmonize beautifully with the fresh artichokes and cherry tomatoes, enhancing their flavors without overshadowing them. The light body of the Pinot Grigio complements the salad’s delicate ingredients, while its subtle citrus undertones bring out the natural sweetness of the tomatoes and the earthy notes of the artichokes.

220gr Angus Beef Ribeye, rucola, & parmesan salad

The Costata Di Manzo at Duomo Ristorante is a masterful execution of a classic Italian main course. This 220-gram Angus Beef Ribeye is grilled to perfection, resulting in a steak that is both tender and succulent. The ribeye is seasoned and cooked with expert precision, yielding a flavorful, juicy interior with an intense beef favour and buttery richness that surpasses even the finest steakhouses.

The accompanying rucola and parmesan salad provides a refreshing and zesty contrast to the richness of the beef. The salad’s sharp parmesan and the slight bitterness of the rucola cut through the steak’s robust flavors, creating a well-balanced plate. This dish is not only a feast for the taste buds but also a visually arresting presentation, showcasing the restaurant’s commitment to quality and attention to detail. After experiencing this exceptional ribeye, Duomo Ristorante has undoubtedly become my new favorite “steakhouse.”

The wine showcases a deep, intense ruby red color. On the nose, it presents bold and clean aromas of ripe cherry, black cherry, and wild berries, complemented by fresh, slightly spicy nuances. On the palate, it is both dry and smooth, offering a harmonious balance between its acidity and tannins. The tasting experience is enriched by a pleasing tannic texture, leading to a finish of remarkable persistence with delicate hints of red fruit lingering on the palate.  This is the best red wine I have tasted so far.

The 2019 Amarone Tommasi Valpolicella is a spectacular choice to pair with the Costata Di Manzo, offering a rich and complex complement to the Angus ribeye. This full-bodied Amarone is renowned for its depth and intensity, with flavors of cherries and hints of spices.

The wine’s robust profile and velvety tannins provide a perfect balance to the steak’s rich and savory flavors, enhancing the overall dining experience. The Amarone’s warming character and slightly sweet undertones harmonize with the caramelized crust of the ribeye, creating a deeply satisfying and indulgent pairing.
