Foie Gras S$20

Pan fried duck liver with rhubarb mousse and caramelised marmalade of kumquats and sweet orange.

The foie gras was seared very well and the sweet marmalade does a good job of balancing.

Seared Hokkaido Scallop S$28

Trio of scallops seared in high heat,  cooked to perfection with a sheer centre and topped with Russian caviar.

The scallops tasted fresh and I liked the colourful presentation.

Chef’s Signature Porcini Cappucino S$12

Porcini soup served in a coffee cup, topped with cappucino froth and finished with truffle zest and snipped chives.

The soup arrived piping hot as it should be and the aroma of the truffle was just heavenly.

Sous Vide Chicken Breast S$22

53 degree chicken breast with morel mushrooms veloute and roasted vegetables.

As good as it gets.  I really can’t fault anything here.

Joue de Boeuf S$28

Beef cheek stewed in red wine served on truffle mash,  sliver onion and sauteed velvety field mushroom.

Authentic.
