Noyah La Maison is a recent addition to Changi Airport’s dining scene, offering a unique take on Peranakan cuisine, which they affectionately refer to as ‘quirky Peranakan.’

The inspiration behind Noyah La Maison comes from the chef’s grandmother’s cherished recipe book, where traditional dishes are given a modern twist. This innovative approach gave birth to the restaurant, which presents a contemporary menu that pays homage to the chef’s Straits-Chinese heritage while offering a fresh and creative culinary experience.

The bowl was generously filled with yellow noodles, succulent prawns, tender fish cakes, refreshing cucumbers, crunchy bean sprouts, a perfectly cooked egg, and a dollop of homemade sambal.

The heart of this dish was the rich and aromatic laksa broth. It was a harmonious blend of spices and flavors that offered a delightful balance of creaminess and a mild kick of heat. The fragrance of the broth alone was enough to whet my appetite.
