Meatsmith Little India, Singapore

I can totally imagine this place being one of the rendezvous spots for Mr Big and Carrie from Sex and the City.  Meatsmith Little India (more specifically Rogue Trader, the bar/ restaurant above Meatsmith Little India) is shielded from the bustling chaos that is Little India.

Through glass windows,  you are safely ensconced in air-conditioning but you can still observe the hustle and bustle of the streets outside.

Butter Chicken Hot Pockets S$10

The meat from chicken wings is expertly carved out, leaving behind a thin film of skin. The meat is mixed with cashew nuts and paneer cheese, then stuffed back into the skin and deep-fried before it finishes in the tandoori oven. Served with a butter chicken dipping sauce, the bone-less wings boast succulent flesh and an almost subtle milky taste with discernible chunks of nuts to make the bite all the more pleasurable.

Madras Pork Cheeks S$8

Crisp-on-the-outside, melt-in-the-mouth fatty pork jowl with a spiced lentil rub.  You can enjoy it with the Madras mustard sauce on the side if you wish more flavour.

Coconut Chutney Pork Ribs S$26

This dish combines flavours from the chef’s native Penang and Thai cuisine.  Tangy coconut and lemongrass are glazed over the smoked ribs. Fried curry leaves and desiccated coconut are then added liberally on top for a celebration of South East Asian flavours.

The best thing about Meatsmith Little India or Rogue Trader is that the bartender can customize a cocktail to your preferences.  All customized cocktails are $22 and they are all seriously good.
