A Surprisingly Refined Dining Experience @ Vibez Bistro Bar, Singapore

In the highly competitive dining arena of UE Square is the under-rated gem Vibez Bistro Bar.  Vibez Bistro Bar serves healthy Thai food.

Vibez Bistro Bar uses only non-GMO, non-hormones-injected or antibiotics-fed fish/ meat/ eggs.  In addition, they also substitute highly processed white sugar and table salt with healthier natural alternatives like sea salt, cane sugar, honey and Gula Melaka. 

Vibez Bistro Bar provides a lot of vegan and gluten-free options.  Best of all, for those looking to look weight, Vibez Bistro Bar has keto options.  For those unfamiliar with keto, a keto diet is low in carbs and higher in fats.  A low carb diet prevents an insulin spike which causes the ingested carbs to be converted to fats in the body.

The vibe of Vibez Bistro Bar (get the pun?) is casual.  Nevertheless, as it is also stocks a full bar, it is also possible to have a refined dining experience and do fun wine parings with the Thai dishes.

Thai Ceviche (Gluten free) $14.60

Sashimi ahi tuna cured with lime, paired with Thai vinaigrette.  An unique Thai fusion dish.

An unbelievable starter.  The beautiful and authentically Thai flavours blend seamlessly and flawlessly in this cold starter.  I never thought Thai flavours can be transposed onto ceviche but its works flawlessly.  The tortilla chips add crunch and add fun!

Piccini 1882 Vino Spumante Extra Dry NV $14

This prosecco simply delicious.  It is very midly sweet, they serve it ice-cold and the acidity and refreshingness of the prosecco pair excellently with the acidity of the ceviche.

Fish Collagen Broth (Gluten Free) $18.30

Pan-fried barramundi, fried shallots, ginger in slowed cooked over 4hrs fish stock, filled with collagen goodness

Amazing! I do believe the fish stock was slow cooked for over 4 hours — it is simple, light and has that clear sweetness that can only come from slow cooling the fish over a long time.  The barramundi was expertly pan-fried — it was crispy even in soup.  The barramundi is delicious -–it is clear, not fishy and sweet. I also like that the dishes comes with a lot of vegetables.  It also has slow-cooked, mushy taro cubes for creaminess —– very, very clever.

Piccini 1882 Vino Spumante Extra Dry NV $14

The lightness of the prosecco pairs excellently with the simple, unadulterated flavours of the broth.

Green Curry Mixed Vegetables (Vegan/ Gluten free) $15.30

Creamy and delicious.  The vegetables are soft which means they have been cooked for a considerable amount of time.

Suggested pairing:

Indomita Varietal Sauvignon Blanc, Chile $11

Compared to the prosecco, this Sauvignon Blanc is of course more robust and can handle the creamy “heaviness” of the curry.

Thai Olive Organic Rice (Vegan) $16.30

Isan-styled fried rice with green mangoes, onions, chilli padi and impossible meat

Another outstanding dish.  Firstly, the rice grains are quite firm and distinct and not mushy – I hate mushy fried rice.  This dish is also not greasy.  You can taste the nuttiness of the organic rice —-amazing! Absolutely delicious!

Indomita Varietal Sauvignon Blanc, Chile $11

The Sauvignon Blanc has a suitable robustness to handle the nuttiness and substantiality of the rice.

Grilled Jumbo Ika (Gluten Free) $27.30

Jumbo Ika grilled, comes with special Thai chilli dipping sauce

The Thai chili dipping sauce is sour-spicy.

Chicken Cashew Nuts (GF) $15.30

Full of umami-taste, tossed with dried chilli, onions and cashew nuts.  Recommended with rice.

The chicken and ika are slightly heavier, greasier dishes (compared to the dishes before).  The bubbliness and acidity of the rose can handle these 2 dishes well.

Vanilla gelato drenched with espresso, choc sauce

I requested for my affogato to come without choc sauce as I think that would add unnecessary artificial sweetness.  I thought it was very smart to offer adding rum.  It adds another dimension to the affogato.   You can also substitute the espresso entirely with the rum.  The rum provides a balance to the vanilla gelato but without caffeine, perfect for people who are hyper-sensitive to caffeine.

All in all, despite the casual environment, I was able to curate a refined, excellent wine pairing experience.  It was a memorable dining experience.
