Xperience, a stylish restaurant in Sofitel So Singappore, offers excellent Fusion cuisine. It is helmed by celebrity chef Mrs Anne-Cecile Degenne. The restaurant has thoughtfully made available its cuisine in three portions (XS- tasting portion, XM- portion for one person, XL- sharing portion).
Foie Gras Siew Mai
The foie gras-enclosed Siew Mai sits in clear broth, garnished with bits of truffle and a touch of spring onion. The broth is clear and delicate. You can smell the distinct layers of the unmistakeable black truffle with the freshness of the spring onion. The delicate broth and the complex fragrance and taste of this dish make it a great one.
Lobster and Scallop Laksa Risotto
There is an abundance of seafood in this dish—– a piece of white, fresh lobster, a crab claw and 2 scallops sit on the risotto rice surrounded by coconut foam. The seafood is all very fresh. The risotto flavour is Intense—- it is sweetly spicy and you can smell the various spices.
Decadent Chocolate
Chocolate everywhere—- chocolate ice-cream, chocolate cream, hard chocolate. Most interestingly, there is chewy dehydrated chocolate cake.
When I went there on a Saturday night, it was quiet. Such an under-rated restaurant. If Sofitel So knows what they are doing, they will never let go of the chef.
